The exhibition focuses on the extraordinary relationship between the two great Italian masters in Renaissance Rome that sparked a 25 year friendship and partnership. During this period they each produced outstanding works that neither could have  created without each other.

Palazzo Tronconi's First Biodynamic Sparkling Wine

'Ancestrale'

It seemed fitting that we should name our first sparkling wine 'Ancestrale' after the oldest natural method of sparkling wine production.

Sparkling wine was first produced using this ancient method almost 400 years ago by monks in the monastery of Sainte Hilaire in France. 

It is a technique that is very difficult to control and requires great skill to produce but at Palazzo Tronconi we are hoping for a very unique, natural aromatic wine.

For the base wine we chose our unknown grape variety 'pampanaro', the hand picked grapes were harvested earlier than normal to preserve acidity. Part of the must was taken and refrigerated for six months. The remainder was left to complete the wine making process. 

In March we blended the two together here at our winery in Arce,  we bottled on the same day allowing the fermentation process to commence, trapping the CO2 in the bottle. 

Unlike other wine and champagne making methods, no sulphites, yeasts and sugars are added to the secondary fermentation. Using the ancestral method fermentation occurs in the bottle using up much of the remaining natural sugar and yeasts to produce a fresh, dryish and delicious biodynamic sparkling wine. 

We are hoping Ancestrale will be available in October to toast our 2017 harvest. In the meantime we have to allow nature to take it's course.

I am still trying to work out how we pulled this one off, a true comedy moment, myself the winemaker, a head chef and a pizza maker squeezed into the smallest of cars, a fiat, with pots, pans and ingredients, including eggs, all en route to the UK for a small taster of what we offer at our cookery classes here at Palazzo Tronconi, Arce.

Hosted by Jo Mackay owner of www.bookingsforyou.com in her beautiful Surrey home, we bought the flavours of Italy to her kitchen. The event kicked off with Head Chef Leonard Grimaldi, presenting a step by step class of a four course menu. 

 Everyone seemed genuinely interested in what we had to offer,  the bloggers and writers were intrigued by our own biodynamic wines, whilst enjoying the flavours of our region.

Later in the evening 15 guests were invited to take part in a pizza making class with Giuseppe Marcuccili.

A completely different atmosphere to the earlier class, this was messy, fun and noisy, the results were incredible, four types of pizzas all made with the same dough but each with different toppings. Lots of pleasing sounds came from the guests as each pizza was presented hot out of the oven! Thank you to Jo and bookingsforyou.com and to everyone that came for your wonderful write-ups!
